For this item at Testaccio, a Roman-inspired restaurant in Chicago’s Logan Square, executive chef Jacob Solomon tops a pizza with ricotta cheese, Calabrian chile, black trumpet mushrooms, cured tomatoes (cherry tomatoes dusted with salt and a little sugar, dehydrated and then stored in olive oil with oregano, thyme, rosemary and sage) and a sunny-side-up egg in the middle. It’s then garnished with Parmesan cheese and a mix of herbs, including, basil, oregano, chives, parsley and sorrel.
