Due to her father’s (Aldo) many years in the wine and restaurant industry, Ariana has always been interested in the world of food and wine. It makes sense that her first job would be as a hostess in a local Oak Park restaurant at the age of 16. Or that she spent a few monthsin the Piemonte region of Italy living at Vietti winery and learning all about how wine is made as well as participating in the harvest herself after graduating from high school. After heading to college at the University of Illinois at Urbana-Champaign, she came back and worked every summer with her father at Osteria Langhe as well as at some larger, downtown Chicago restaurants to get more of an idea of how different restaurants operate. Upon graduating in 2019, the concept of Testaccio was an idea that formed through conversations with her father and a trip to Rome where she was able to experience the beauty and uniqueness that is Testaccio. Ariana can’t wait to be a part of this exciting new venture, working side by side with her father.
